When you double-click an Adobe Illustrator document in the Everything window, it focuses the Illustrator App, but minimizes the workspace so that only the toolbars are showing. Then it provides the error Can't Open the Illustration. There is not enough room for the document. Increase the window size and try again.
This doesn't happen in Explorer and doesn't happen if you have already opened the file. I've never seen this behavior before. Just installed the Everything Update today.
Note: It displays the contents of the AI file perfectly in the Preview window.

Your post should at least contain your Everything version.
May be you run Everything as Administrator ?
Don't do that as it may give all sorts of problems.

Please make sure Everything is installed correctly and running as a standard user:
- In Everything, from the Tools menu, click Options.
- Click the General tab on the left.
- Check Store settings and data in %APPDATA%\Everything.
- Uncheck Run as administrator.
- Check Everything Service. (Please make sure this is tick-checked and not square-checked)
- Click OK.
- Exit Everything (right click the Everything tray icon and click Exit).
- Restart Everything.
