Is there any way to stop Everything scanning my drives when I consider it unnecessary?

If you change any setting under Tools -> Options -> Indexes that would cause a rebuild, Everything will cancel any existing rebuild and start the build process again.
Pressing ESC will cancel a db rebuild (This is not always instant).
Exiting Everything will also cancel a DB rebuild.
Certain actions can cause the DB to lock, in which case you will have to wait for the rebuild to complete.
