I'm not complaining, but I don't understand the behaviour of Everything in Advanced Search (which dialogue box I began to explore this afternoon)
I ask for "all these words" and specify "free doc train", and please note that the string "doc" is not my ultimate sub-string.
The Result List shows what I expect it to show, although were I more knowledgeable I might have specified "the name part only" - all text after the right most back slash and before the right most period (if any).
Everything gets smart, and, i suspect, recognizes "doc" as a document extent.
Or else Everything finds doc in the file name (which most times includes the extent portion of a file's name) and then sees that "doc" appears to the right of the rightmost period and says "Oh Ho! This is an extent. I'd better add the ext: function/modifier to the search string in the search box above the Result List."
I don't see this behaviour with "free xls train" and "free txt train", but there again I get nothing in those Result Lists either.

(Minutes later) I see that when I use the box "any of these words", the search box is resurrected as "train|doc|free" so Everything does seem to construct a basic search string from the Advanced search dialogue box.

...but when I load both "all of these words" and "any one of these words", the generated search string does NOT include the Ext:

Pressing F2 in the search box will show the Advanced Search.
The Advanced Search dialog is initialized from the current text in the search box.
ext:doc in the search box will populate the Extension field in the Advanced Search.
You might need to scroll down the advanced search page to view this field.
Unknown search functions are listed at the bottom under the Additional search options field.
For example:
date-taken:today

Was the extension field set in the advanced search dialog?

Yes. My default search when I load Everything is

I had scrolled down and realized that "Advanced search" was going to be a two-day task to write up. At that point I emitted a loud sigh and went to make my supper!
I now see the Extension: box with "doc" shyly peeking out at me.
