Everything listing ?

I recently installed the Everything search app on my W10 desktop and am wondering at what I am seeing. I'd appreciate some explanation. In particular:

When I click the "Everything" label in my applications tray I view a long listing of folders like this one:

Local Site C:|Users\801\Local\Google|Chrom... 97K 12-31-2017 9:23

The list seems to be continuously self-generating, adding another item roughly every 15 seconds, with hundreds from this morning alone.

What is it Everything is doing? Is this what's called indexing?
Is there a document I can read that describes in a general way just how Everything works?

Indexing can take a few seconds.
Once the indexing stage is complete, All your files will be displayed.

Probably your list is sorted by "Date Modified". Then it gives the recent changes in your system.
You might want to sort it by Name to get the view you're expecting for.

Files are constantly being created, modified and deleted by various software on your computer.
"Everything" is a real-time search engine and will show these changes in real-time.

"Everything" shows all files by default.

To only show results when you perform a search:

• In Everything, from the Tools menu, click Options.
• Click the Results tab on the left.
• Check Hide results when the search is empty.
• Click OK.
